The Basque Table……a cookbook

The Basque Table (by Teresa Barrenechea) is a cookbook I wanted since it was first published a 1998……..took me a while, but I bought it the other day when I returned home from the Basque country. The recipe for Alubias Blancas has an interesting twist to it that I am going to make and will incorporate it when I do the white beans later today:

“In a skillet, heat the olive oil (1/4 cup) over medium high heat. Add the onion (one small onion, chopped), and saute for about 10 minutes, until the onion is soft. Add the paprika (1 tablespoon), and cook, stirring, for about 2 minutes longer, until the mixture is well blended. Add it to the beans. ”

As best I can tell this is calling for regular paprika, although I am going to make a second batch of the onion mixture with a medium heat Spanish smoked paprika. Hey, its autumn here, a cool, crisp beautiful day and a perfect time for playing in the kitchen.
